Ham and Leek Roulade with Tomato Sauce

- 3 sticks Leeks

- 20 slices cooked ham
- 2 Tbsps butter
- 600 grams Tomatoes
- 2 garlic cloves
- olive oil
- 50 milliliters dry white wine
- freshly ground peppers
- 4 Tbsps Crème fraiche
- parsley (for garnish)
Preparation steps
Preheat oven to 80°C (approximately 175°F).
Cut leeks lengthwise, rinse under running water, trim and cut into 9 cm (approximately 3 1/2 inch) long pieces. Blanch for 4 minutes in boiling salted water then drain, plunge into ice water, remove and drain well. Wrap leek pieces in slices of ham and fry until golden brown in a hot pan with 2 tablespoons melted butter. Keep hot in preheated oven.
Blanch tomatoes, peel, quarter, remove core and dice into small pieces.
Peel garlic, chop finely and sweat in a hot pan glazed with 2 tablespoons oil. Add tomato pieces and sauté briefly, deglaze with wine and broth and simmer for 2-3 minutes. Season with salt and pepper. Spread tomato sauce into 4 ramekins and serve leek pieces on top. Drizzle with creme fraiche and serve garnished with parsley.
