1 ¾ cups Prune (chopped)
cup rolled oats
1 ½ tsps baking soda
cup Coconut oil
4 ozs boiling water
2 eggs
cup honey
1 ¼ cups Whole wheat flour
¼ tsp ground cinnamon

Preparation steps

1.
Preheat the oven to 350 degrees F.
2.
Place the prunes, oats, baking soda and coconut oil in a bowl and add boiling water. Stir gently and set aside.
3.
Meanwhile, in a larger bowl, whisk together the eggs and honey until well combined. Stir the flour and ground cinnamon and then finally the prune and oat mixture. Mix well and pur into a greased loaf pan.
4.
Bake for 45 minutes until the knife inserted into the loaf comes out clean.
5.
Cool out of the pan on a cooling rack before slicing.

This was great. Not too sweet and moist. I combined raisins and prunes, and flax egg. Work fine with substitutes. Great for breakfast or teatime.
