150 grams Raclette Cheese
250 grams grated Cheddar cheese
125 milliliters dry white wine
2 Tbsps butter
500 milliliters milk
200 grams Whipped cream
salt
freshly ground peppers
300 grams Broccoli
1 can small Corn

Preparation steps

Peel and slice the garlic. Peel and finely dice the onion. Dice the raclette cheese.

Heat the butter in a pan. Sweat the onion and garlic until soft. Pour in the wine, bring to a boil and allow the wine to evaporate. Pour in the milk, cream, cheese cubes and 200 grams (approximately 7 ounces) of grated cheese. Stir constantly until the cheese has melted. Drain the corn and blanch the broccoli florets in boiling salt water for 3-4 minutes.

Puree the soup until creamy and season with salt and pepper. Add the corn and broccoli.

Sprinkle with cheese and serve with buttered rolls.
