- 1 onion
- 30 grams butter
- 2 Tbsps Pastry flour
- 200 milliliters milk
- 600 milliliters Beef broth
- 100 grams Fresh herbs (such as dill, parsley, comfrey, goutweed and plantain)
- 100 grams Whipped cream
- salt
- freshly ground peppers
- 1 splash lemon juice
- Daisy (for garnishing)
Preparation steps

Peel the onion and chop finely. Saute in hot butter until translucent. Add the flour and saute until golden brown. While stirring, add the milk and broth, bring to a boil and keep stirring until smooth. Simmer for about 10 minutes while stirring occasionally.

Rinse the herbs, pat dry and chop coarsely. Set aside some herb leaves for garnishing. Add the sour cream to the soup and puree. If needed, add a little more broth, but do not allow the soup to boil.
3.
Season with salt, pepper and lemon juice and transfer the soup to deep plates.
4.
Serve garnished with the remaining herbs and the daisies.
