¼ cup softened butter
3 eggs (separated)
1 clove garlic cloves (crushed)
2 Tbsps whole-grain Mustard
Nutmeg (freshly grated)
1 cup freshly grated Parmesan
4 Tbsps cream
2 Tbsps Crème fraiche
2 Tbsps flour
freshly shaved Parmesan

Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6. Brush the oven-proof cups (or ramekins) with butter.

Beat the butter with the egg yolks, garlic, mustard and nutmeg until light and fluffy. Alternately mix in the grated cheese, the cream and the crème fraîche. Finally, whisk the egg whites until stiff and fold in together with the flour. Season with a pinch of salt.
3.
Spoon the mixture into the moulds and bake in the oven for around 15 minutes until golden brown. Serve garnished with shaved parmesan.
