3 onions
1 garlic clove
2 centimeters fresh ginger
2 Red chili peppers
250 grams Green cabbage
2 carrots
4 Tbsps Corn oil
350 grams mixed Ground meat
1 egg
1 Tbsp cornstarch
salt
freshly ground peppers
1 generous pinch ground cilantro
1.3 liters Chicken broth
80 grams Egg noodle (Asian)
2 Tbsps freshly chopped cilantro

Preparation steps

Peel and finely chop garlic, ginger and one onion. Rinse the chilies, halve, remove the seeds  and cut into lengthwsie strips. Rinse and core the cabbage, cut out the thick ribs and cut the cabbage into strips. Peel the carrots and cut into fine julienne.

In a saucepan heat 2 tablespoons oil and saute the onion with the garlic and the ginger until the onion is translucent. Remove 1 tablespoon and mix the remainder with the ground meat, the egg and cornstarch. Add salt, pepper and coriander and form into small balls. Add the carrot, chilies and cabbage to the pan and saute until well coated. Stir in the broth, bring to a simmer, add the noodles and meatballs and cook until the meatballs are cooked through, 5-7 minutes. .

Meanwhile peel the remaining onions and cut into rings. Heat the remaining oil in a skillet and saute the onions until golden brown  Season the soup again, spoon into soup bowls and serve sprinkled with onion rings and cilantro.
