- 2 ⅔ cups canned Sweet corn (drained)
- 4 large eggs (beaten)
- 1.333 cups Cornmeal
- 1 cup milk
- 1.333 cups gluten-free self-rising flour
- salt
- peppers
- 1 ½ cups smoked Scamorza (diced)
- 4 cherry Tomatoes (diced)
- 6 cherry Tomatoes (halved)
Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a 23cm|9" deep square baking tin.
2.
Mix together the sweetcorn, eggs, cornmeal, milk, flour, a little salt and pepper. Beat until well combined.
3.
Stir in the diced tomatoes and cheese.
4.
Pour into the tin and bake for 20 minutes. Remove from the oven and arrange the tomatoes, cut side down on top. Returning to the oven and cook for a further 10 minutes.
