For the base
2 cups Bread flour
1 tsp active dry yeast
1 tsp salt
cup warm water
1 Tbsp olive oil
For the topping
2 Tbsps olive oil
2 cloves garlic cloves (chopped)
1 ⅛ cups tomato passata
1 Tbsp tomato puree
2 tsps dried oregano
salt

1 ¼ cups Mozzarella (sliced)
cup Pepperoni (thinly sliced)

Preparation steps

1.
For the base: mix together the flour, yeast and salt in a mixing bowl. Make a well in the centre and pour in the water and oil. Mix to a soft, fairly wet dough.

Turn onto a lightly floured surface and knead for 5 minutes until smooth. Put into a lightly greased bowl, cover with oiled cling film and leave in a warm place to rise until doubled in size - about 1 hour.

Heat the oven to 230°C (210° fan) 450°F gas 8. Line a baking tray with non-stick baking paper.

Quickly knead the dough and roll out into a large round about 30cm|12" in diameter. Place on the baking tray.

For the topping: heat the oil in a frying pan and cook the garlic over a low heat for 30 seconds. Add the passata, tomato puree and oregano and season to taste. Simmer for 10 minutes until thickened.
6.
Spread the base with the tomato sauce, then put the mozzarella and pepperoni on top.
7.
Bake for 10-12 minutes until the topping is bubbling. Garnish with basil.
