4 scallions (trimmed and halved)
cup water
¼ cup dark soy sauce
2 Tbsps Mirin
1 Tbsp Rice wine vinegar
2 tsps honey
1 Tbsp Chili sauce
flat-leaf parsley
mixed greens

Preparation steps

Thread the chicken onto pre-soaked bamboo skewers, alternating with pieces of spring onion.

Place in a slow cooker, cover with a lid, and cook on a high heat for 3 hours.

Meanwhile, combine the water, soy sauce, mirin, rice wine vinegar, honey, and chilli sauce in a small saucepan.

Warm over a low heat until combined. Season to taste with salt and pepper and set to one side.

Once the chicken is cooked through, preheat the grill to hot.

Brush the skewers with the sauce and grill for 1-2 minutes on both sides, until glazed.

Serve with parsley and salad on the side.
