- For the cupcakes
- 1 ⅔ cups all-purpose flour
- ½ cup Almond flour
- 2 tsps Baking powder
- ½ tsp baking soda
- 3 eggs
- ½ cup sugar
- ½ tsp vanilla extract
- ⅜ cup sunflower oil
- 1 cup plain Yogurt
- 2 Kiwi (peeled and sliced)
- For the strawberry frosting
- 1 cup Strawberries
- 2 Tbsps powdered sugar (more if needed)
- 1 cup cream
- To decorate
- 12 Kiwi
Preparation steps

For the cupcakes: preheat the oven to 350°F. Grease a 12 muffin tin.

Mix the flour, almonds, baking powder, and baking soda in a bowl.

Beat the eggs in a mixing bowl and stir in the sugar, vanilla, oil, and yogurt. Add the flour mix to the egg mixture and beat quickly until all the ingredients are moist.

Spoon the mixture into the tins to cover the bases. Add a slice of kiwi fruit and cover completely with mixture.

Bake for 20-25 minutes until golden and risen. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
6.
For the strawberry frosting: blend the strawberries in a food processor or blender until pureed, or mash well with a potato masher. Push the puree through a sieve into a bowl and stir in the icing sugar.
7.
Whisk the cream until stiff and gradually fold in the strawberry puree. Beat in more sifted icing sugar if the mixture is too thin.
8.
Spoon into a piping bag and pipe a swirl on top of each cake. Place a kiwi slice on top of each cake.
