6 sweet onions (peeled and thinly sliced)
6 Tbsps good quality olive oil (divided)
1 Vanilla bean
1 tsp sugar
0.333 cup dry white wine
½ cup vegetable stock
salt (to taste)
freshly ground Black pepper (to taste)
2 Tbsps finely chopped Basil
16 jumbo shrimp (rinsed; peeled and deveined)
2 cloves garlic cloves
1 pinch crushed Red pepper flakes
16 cherry Tomatoes (rinsed and halved)

Preparation steps

Heat 2 tablespoons oil in a large skillet set over medium-high heat. Place the onions in the skillet and toss to coat. Split the vanilla pod lengthwise and scrape out the seeds; add vanilla seeds and sugar to the skillet, and caramelize the onions.

Deglaze the pan with white wine. Add the vegetable stock. and gently simmer the onion mixture until onions are soft and translucent. Season with salt and pepper.

Puree basil leaves and 3 tablespoons olive oil; season to taste with salt and pepper. Set aside.

Heat the remaining oil in a skillet set over medium heat. Pat the shrimp dry with paper towels. Place the shrimp, garlic and red pepper flakes in the skillet and cook, turning once for 5 to 6 minutes or until the shrimp is cooked through and opaque. Add the halved cherry tomatoes for the last 2 to 3 minutes.

To serve, divide onions between 4 warmed plates, arrange cherry tomatoes and shrimp over the onions. Drizzle with pureed basil oil and serve.
