100 grams Long grain rice

200 grams Strawberries
1 muskmelon
1 Mango
8 leaves Basil
1 Vanilla bean
125 grams butter
4 Tbsps powdered sugar

Preparation steps

Cook long-grained rice in plenty of water seasoned with salt and a little bit of sugar until al dente, drain, rinse and drain again. Rinse and dry strawberries, hull and cut into thin slices.  Peel melon, remove seeds and cut pulp into meduim-sized slices. Peel and pit mango, cut pulp into thin slices. Set aside 4-6 slices of each fruit, cut the rest into cubes.

Place one tablespoon of rice into four glasses, top with some mango slices. Next layer 2 tablespoons of rice and some melon slices. Again layer 2 tablespoons of rice and some strawberry slices. Repeat layers until all fruit slices are used and rice becomes top layer. Sprinkle with diced fruit.

Halve vanilla bean and scrape out seeds. Melt butter in a pot. Cut vanilla bean into four pieces and add to butter. Caramelize powdered sugar in a saucepan until light yellow, remove from heat and add butter with vanilla, mix well. Drizzle vanilla butter over rice desserts and garnish each glass with vanilla piece. Cut basil into thin strips and sprinkle on desserts. Serve.
