½ Red cabbage (about 400 g)
2 stalks Leeks
salt
3 ripe Pear (such as Williams Christ)
2 Tbsps lemon juice
1 small onion
200 grams Whipped cream
freshly ground peppers
1 tsp sugar
½ tsp ground allspice
2 Tbsps Red wine vinegar
2 Tbsps freshly chopped parsley

Preparation steps

Trim and quarter the cabbage. Remove the stalk and julienne crosswise. Place in a bowl and cover with boiling water, then let stand for 5 minutes. Drain well. Rinse the leek. Slice the white and light green parts on a bias into 2 cm (approximately 3/4 inch) long pieces. Blanch the leek for 5 minutes in boiling salted water.

Drain the leeks well. Peel and quarter the pears. Remove the cores and slice. Drizzle with lemon juice, then mix with the cabbage and leeks in a large bowl.

Peel and finely dice the onion, then mix with the sour cream, sugar, allspice, and vinegar. Season to taste with salt and pepper. Mix in the parsley. Pour the sauce over the salad, mix gently, and serve.
