Lentil Burgers

Both lentils and rolls enrich this vegan burger with plenty of fibre. This is good for the intestines and satiates for a longer time. The lentils also score points with lots of vegetable protein and the mineral magnesium, which plays an important role for a healthy nervous system.

Ingredients
- For the burgers
- 250 grams red Lentils
- 1 garlic clove
- 1 small red Hungarian wax pepper
- 2 eggs
- 100 grams Oats
- salt
- freshly ground peppers
- ½ tsp Turmeric
- ½ tsp Cumin
- 4 Tbsps Canola oil
- For the burger
- 4 White rolls
- 100 grams Herb butter
- 4 sheets Crisp salad
- 1 lamb's lettuce
- 1 Tomato
Preparation steps
Cook lentils until softened, about 20 minutes. Drain. Meanwhile, peel and finely chop garlic. Rinse peppers, remove seeds and ribs and cut into small cubes. Puree half of the lentils and mix with garlic, peppers and oatmeal. Stir in remaining lentils and season with salt, pepper, turmeric and cumin. Mix well.
Form mixture into burgers. Fry burgers in hot oil, about 4 minutes per side.
Slice rolls in half. Spread top halves with herb butter. Rinse lettuce and shake dry. Rinse and slice tomatoes.
Place lettuce leaves on bottom halves of buns. Top with burgers, tomato slices, and lettuce. Place top halves of buns on burgers and serve.
