95 ozs beef Short rib (trimmed)
½ cup flour (seasoned with salt and pepper)
¼ cup vegetable oil
3 tsps garlic cloves (minced)
2 large onions (chopped)
2 ribs Celery (chopped)
2 carrots (chopped)
½ tsp Dried rosemary
½ tsp dried thyme
2 ½ cups Beef broth
2 bay leaves

Preparation steps

Preheat oven to 350 degrees F.

Dredge ribs in seasoned flour.

Heat oil over medium high-heat, in a Dutch oven. Add ribs in batches, and brown on all sides. Set aside browned ribs in a deep bowl (juices will form). Add garlic, onions, celery and carrots to pot and cook, stirring until vegetables are browned. Add the ribs and juices, back to the pot, along with the rosemary, thyme and beef broth, and bay leaves. Bring mixture to boil, cover, and place in preheated oven.

Bake for 2 1/2 hours. Remove pot from oven and place ribs in a deep platter or bowl. Boil remaining liquid and vegetables about 15 minutes or until reduced by half. Strain liquid, discarding cooked vegetables and bay leaves.

Return strained liquid and ribs to pot and simmer for 5 minutes. Serve over noodles, rice or mashed potatoes.
