500 grams Green cabbage

700 milliliters Vegetable broth
6 Radish
1 yellow Bell pepper
1 large onion
2 fresh Limes
3 Tbsps olive oil

Preparation steps

Soak the beans overnight in cold water. Rinse the cabbage, remove the leaves and cut them into strips. Toss with 1.5 tablespoons of salt and let stand for 2 hours. Drain the beans and boil in the broth for 1 hour.

Rinse the radishes and cut into very thin slices (or use a planer). Rinse the peppers, cut into quarters, remove seeds and then cut into very small cubes. Peel the onion and cut in half, then into strips. Rinse the limes in hot water, cut one lime into quarters and juice the second lime. Mix the oil with the lime juice and season with salt and pepper. Rinse the cabbage and drain well. Rinse the beans in cold water and drain well. Toss the beans with the cabbage, radishes, onion strips and peppers. Arrange the salad on plates and drizzle with the vinaigrette. Serve with freshly ground pepper and garnish with lime wedges.
