cup superfine caster sugar
3 eggs (beaten)
1 tsp vanilla extract
1 cup self-rising flour (sifted)
1 Tbsp milk
½ cup thick Custard

Preparation steps

1.
Heat the oven to 180°C ( 160° fan) 350°F gas 4. Place paper cases in a 12 hole bun tin.
2.
Beat the butter and sugar in a mixing bowl until light and creamy. Gradually beat in the eggs and vanilla until blended.
3.
Sift in the flour and gently stir into the mixture with the milk, until combined.
4.
Spoon into the paper cases to 3/4 fill them.
5.
Spoon the custard into a piping bag and pipe into the centre of the mixture - but not touching the bottom of the paper case.
6.
Bake for 18 - 20 minutes until risen and golden. Cool in the tins for 5 minutes then place on a wire rack to cool completely.
