- 2 ⅔ cups Lobster meat (cooked and removed from the shell, cut into chunks)
- 2 scallions (sliced into rings)
- 1 tart Apple (diced)
- 3 Tbsps Mayonnaise
- 1 tsp lemon juice
- 4 sub Rolls (or baguette rolls)
- Cress (to garnish)
Preparation steps
1.
Combine the lobster, spring onions, and apple in a bowl. Stir in the mayonnaise and season to taste with lemon juice, salt, and ground black pepper.

Split the rolls lengthways and fill with the lobster salad. Serve garnished with cress.
