Majorcan Cod with Swiss Chard

- 600 grams Stockfish
- 500 grams waxy potatoes
- 4 Tomatoes
- 250 grams Swiss chard
- 4 scallions
- 2 garlic cloves
- 150 milliliters olive oil
- 2 Tbsps Pastry flour
- 2 Tbsps freshly chopped parsley
- 200 milliliters dry white wine
- salt

Preparation steps
Soak cod in water for about 24 hours, changing water at least 4 times. Rinse, pat dry and cut into pieces.
Peel and rinse potatoes, cut into slices. Blanch tomatoes in hot water, rinse in cold water and peel. Quarter and remove seeds, dice. Rinse swiss chard. Cut out hard stems and chop leaves. Rinse and dry scallions, cut into rings. Peel and finely chop garlic.
Heat 120 ml (approximately 1/2 cup) of olive oil in a large pan and cook potatoes for about 6-8 minutes or until golden brown. Remove from the pan and drain on paper towels.
Coat cod with flour. Cook fish in remaining oil for about 1-2 minutes per side or until golden brown. Remove from the pan and place into a saucepan. Spread potatoes over fish. Drain oil down to about 3 tablespoons and saute scallions, garlic, parsley, tomatoes and chard leaves for about 1-2 minutes. Add wine to the pan and simmer for about 10 minutes on medium heat. Season with salt and pepper.
Preheat the oven to 180 ° C upper and lower heat.
Spread vegetables over fish and potatoes and bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes. Remove from the oven and serve.
