1 Tbsp Canola oil
1 tsp sesame oil
2 cloves garlic cloves (finely chopped)
2 scallions
4 cups fresh, wide Rice noodles (softened in hot water)
6 large shrimp (peeled and deveined)
2 Tbsps Sweet soy sauce
1 Tbsp Sriracha
1 Tbsp soy sauce
4 fresh Basil
¼ cup Mung bean sprouts
fresh cilantro (for garnish)
shredded carrots (for garnish)

Preparation steps

1.
Heat both oils in a wok over high heat until it begins to smoke.
2.
Add the garlic and spring onions and stir briefly until the fragrant.
3.
Add the noodles, shrimp and sauces and stir to combine. Continue to fry for another couple of minutes until the shrimp are almost completely opaque and the noodles are heated through. Mix in the fresh basil and bean sprouts.
4.
Transfer to individual bowls and garnish with fresh sprigs of cilantro and carrot strings. Serve.
