Preparation steps

1.

Cut the bacon into thin strips. Peel and coarsely chop the onion. Heat the ghee in a large pot and sauté the onion and bacon for about 5 minutes. Rinse the lamb meat and pork loin, pat dry and cut into bite-sized pieces. Cut the salami into slices. Add the lamb meat, pork loin and salami to the pot.

2.

Rinse and dice the tomatoes and add to the pot. Deglaze with the white wine and vegetable broth. Peel and chop the garlic and add to the pot along with the tomato paste and bouquet garni. Season with salt and pepper, cover and simmer for 10 minutes.

3.

Preheat the oven to 200°C (approximately 400°F). Cut the duck breast into thin slices and add to the pot. Drain the white beans, add to the pot and mix well.  Sprinkle the breadcrumbs and chopped parsley over the stew and transfer the pot to the oven. Cook for about 30 minutes. Remove the bouquet garni before serving.
