Meatballs: Basic Recipe with Variations

- 1 kaiser roll (day-old)
- 500 grams mixed Ground meat
- 2 onions
- 1 egg
- ½ tsp salt (to taste)

- 8 eggs
- 2 Tbsps butter

- ½ bunch parsley
Preparation steps
Soak the bread in 1/4 liter (approximately 1 cup) lukewarm water. Combine all ingredients in a bowl and knead well with your hands. Squeeze water from bread and mix into the meat mixture. With wet hands, shape 8 meatballs. Heat half the margarine in a heavy pan and fry the meatballs in portions, 4 minutes each side. Remove and keep warm on a plate in the oven.
Variations:
Prepare meatballs using the basic recipe. Drain mandarins well. Separate tarragon leaves. Distribute the mandarins over the meatballs and garnish with tarragon.
Prepare meatballs using the basic recipe. Clean mushrooms, wash radishes and slice both thinly. Combine vinegar, oil, salt and pepper and add vegetables. Leave in the marinade 1/2 hour, then spread on top of the meatballs and garnish with watercress.
