Meatballs with Tomato Sauce

- 50 grams Rice
- 100 milliliters Vegetable broth
- 1 stale White roll
- 500 grams ripe Tomatoes
- 1 shallot
- 1 garlic clove
- 1 bunch fresh parsley
- Cooking spray
- 4 Tbsps Tomato sauce
- 100 milliliters Vegetable broth
- salt
- freshly ground peppers
- 500 grams Ground beef
- 1 egg
Preparation steps
Bring the rice with 100 ml of the broth in a pot to boil and cook until done, about 20 minutes. Soak the bread in lukewarm water. Squeeze well and tear into small pieces. Rinse the tomatoes, pat dry, quarter, core and cut the flesh into small cubes. Peel the shallot and garlic and finely chop. Rinse the parsley, shake dry and finely chop the leaves. Grease a pot with cooking spray and sweat the shallots and the garlic until translucent. Add the tomatoes and 3 tablespoons tomato sauce, broth, season with salt, pepper and let simmer for 5-7 minutes over medium heat. Mix in half of the parsley.
Mix the ground beef with the egg, the well squeezed bread, rice, the remaining parsley and the remaining tomato sauce. Season with salt and pepper and shape the mixture into small meatballs. Saute in a skillet with some oil until browned. Reduce the heat and let meatballs cook until done, turning occasionally. Serve on warmed plates with the tomato sauce and with fresh green salad, if desired.
