- 1 honeydew melon
- 2 Tbsps sugar
- 1 Tbsp lemon juice
- 2 Tbsps Lemon peel
- 500 milliliters dry white wine
- 80 grams shelled, unsalted Pistachio
- 2 tsps cornstarch
- 2 Tbsps Chocolate curl
Preparation steps

Cut the peel from the melon. Cut in half, remove the seeds and cut the flesh into cubes. Puree finely with the sugar lemon juice and half the lemon zest.

Heat the wine with the fruit puree. Stir in half the pistachios. Mix a little bit of water with the cornstarch and add to the puree. Bring the mixture to a boil and cook for about 2 minutes, constantly stirring.

Transfer the pudding into dessert bowls and allow to cool. Garnish with the remaining pistachios, lemon zest, and chocolate shaving. Serve immediately.
