350 grams Spinach
1 onion
2 garlic cloves
2 Tbsps olive oil
salt
freshly ground pepper
Nutmeg
1 scoop Mozzarella (125 grams)
100 grams Gorgonzola
1 pkg cooled Fresh dough (or frozen pizza dough, thawed)
4 Tbsps tomato puree

Preparation steps

Rinse spinach and blanch in boiling salted water. Immediately place over ice. Rinse and chop coarsely. Peel the onions and garlic and sauté in hot oil. Add the spinach and cook for about 3 minutes with salt, pepper, and nutmeg.

Preheat oven to 200°C (approximately 400°F). Cut mozzarella into slices and crumbled the gorgonzola.

Roll out the pizza dough into 8 patties at 12-15 cm (approximately 5-6 inches). Place on a parchment-lined sheet pan. Spread the tomato puree on the dough and season with salt and pepper. Top with the spinach, gorgonzola, and mozzarella. Bake in the oven for about 20-25 minutes.
