- 1 lb Zucchini (cut into thick slices)
- 8 ozs Japanese Eggplant (cut lengthwise into 1/3-inch-thick slices)
- 1 red Bell pepper (cut into 6 pieces)
- 1 orange Bell pepper (cut into 6 pieces)
- 1 small Red onion (cut into wedges)
- ¼ cup olive oil
- kosher salt (to taste)
- 2 Tbsps fresh parsley
Preparation steps

Preheat grill to high heat.

In a large bowl, combine all vegetables. Drizzle with olive oil and toss until well coated. Season with salt and pepper, sprinkle parsley, and toss again.
