Nuts are a great source of protein and healthy fats, which is good for your brain and heart and can help lower cholesterol.
You can use any type of nut you have available or prefer.

Preparation steps

Mix together the almonds, hazelnuts and sugar. Add the spices. Whisk the egg and egg yolk, add to the nut mixture and knead everything into a firm dough. Cover with foil and let chill in the refrigerator for 1 hour. Roll out the dough on a sugared working surface and cut out circles.

Line a baking sheet with parchment paper and place the nut circles on it. Bake at 200°C / 400°F for 12 minutes. In a saucepan, melt the sugar over low heat until caramelized. Stir in the peanuts and spread the mixture on the finished cookies. Let cool.
