2 Tbsps Nut oil
2 shallots (sliced into rings)
1 clove garlic cloves (finely chopped)
½ cup Cashews
1 tsp freshly grated ginger
3.333 cups Chicken breasts (sliced into strips)
½ Pineapple (approx. 500 g | 3.333 cups, diced)
2 Bell pepper (red and green, sliced into strips)
1 Tbsp Rice vinegar
1 tsp brown sugar
2 Tbsps light soy sauce
Shredded coconut (to garnish)

Preparation steps

Heat the oil in a wok and briefly fry the shallots with the garlic, cashew nuts and ginger. Add the chicken and stir fry for 1-2 minutes. Add the pineapple and peppers and stir fry together for 2-3 minutes until cooked.

Season to taste with vinegar, sugar and soy sauce. Divide between bowls and serve scattered with coconut. Serve with rice if desired.
