1 ½ ozs Whole Grain Pasta
salt
1 Tbsp olive oil
4 button Mushrooms (halved)
4 cherry Tomatoes (halved if large)
½ Tbsp finely chopped, toasted almonds
1 tsp chopped thyme
freshly ground peppers
2 ozs plain Yogurt
½ tsp lemon juice
½ tsp Wholegrain Mustard
To garnish

1 Small skillet, 1 Baking sheet, 1 Bowl, 1 Small bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Immersion blender, 1 Citrus juicer

Preparation steps

Cook the pasta in a pan of boiling salted water according to the directions on the pack, until al dente. Strain the pasta and set aside.

Heat the oil in a frying pan and add the mushrooms. Cook gently for 6-7 minutes until softened. Add the tomatoes and cook for 3-4 minutes until softened and the mushrooms are golden.
3.
Stir the pasta, almonds and thyme into the pan and season to taste with salt and pepper.
4.
Beat together the yoghurt and lemon juice until blended. Stir in the mustard.
5.
Put the pasta mixture into a serving bowl and drizzle over the yoghurt dressing. Garnish with coriander.
