16 ozs Puff pastry
1 egg (beaten)
3 Tbsps vegetable oil
2 pcs Bacon (chopped)
1 clove garlic cloves (finely chopped)
7 ozs Mixed Mushrooms (chopped)
1 tsp salt
1 pinch Chili flakes
2 Tbsps Sour cream
To garnish
chopped parsley

Preparation steps

Heat the oven to 200ºC / 400ºF. Grease a large baking tray.

Roll out the pastry to a thickness of about 1.5cm|3/4" and cut out 4 squares. Score a smaller square into the top of each piece of pastry and place on the baking tray.

Brush the top edge of the pastry squares with beaten egg and bake for 10-15 minutes, until well risen and golden brown. Place them on a wire rack and carefully cut away the pastry from the score line, leaving square shaped pastry cases.

Heat the oil in a frying pan and fry the bacon until the fat starts to run. Add the garlic and cook for 3 minutes until soft but not browned, then add the mushrooms, salt and chilli flakes and continue cooking until the mushrooms are tender.

Spoon the filling into the pastry cases, top with a soya sour cream and sprinkle with chopped parsley.
