- 1 ⅔ cups Chocolate nut Cookie (crushed to crumbs)
- ½ cup unsalted butter (melted)
- 3 ½ cups plain Dark chocolate (80% cocoa solids, chopped)
- 2 Tbsps Elderflower liqueur
- 2 eggs (beaten)
- 4 egg yolks (beaten)
- 2 cups heavy cream
- 0.333 cup powdered sugar
- To decorate
- cocoa powder
- Elderflower
Preparation steps
1.
Grease a deep 8-9" springform tin and line the base with non-stick baking paper.

Mix together the biscuit crumbs and butter and press into the base of the tin.
3.
Melt the chocolate in a large heatproof bowl over a pan of simmering (not boiling) water. Allow to cool slightly.
4.
Gradually whisk in the elderflower liqueur, eggs and yolks until blended.
5.
Whisk the cream and icing sugar until thick. Fold into the chocolate mixture until well mixed.
6.
Pour into the tin and tap on a hard surface to release any air bubbles. Cover with cling film and chill overnight.
7.
Remove from the tin and sift a layer of cocoa powder over the top. Decorate with elderflowers
