150 grams Ditalini

250 grams waxy potatoes
300 grams thick white Beans (from a jar, such as Butter Beans)
1 shallot
1 Tbsp butter
150 grams pureed Tomatoes
700 milliliters Vegetable broth
freshly ground peppers
½ tsp Red pepper flakes
2 Tbsps parsley

Preparation steps

1.

Cook pasta in a large pot of boiling salted water until al dente, drain, rinse with cold water and drain again. Peel potatoes and cut into small cubes. Rinse beans in a sieve and drain well.

Peel shallots and chop finely. Melt butter in a pan and saute shallots until soft. Add potatoes, sauté briefly, add tomatoes and broth and season with salt, pepper and red pepper flakes. Simmer for about 10 minutes over medium heat.

3.

Add beans and pasta to the pan, simmer for another 3-4 minutes and season to taste. Add parsley. Serve soup immediately in bowls.
