4 Tbsps vegetable oil
1 onion (chopped)
1 clove garlic cloves (chopped)
1 tsp ground Cumin
1 tsp ground cilantro
1 tsp ground ginger
1 medium Sweet potato (finely chopped)
14 ozs canned Tomatoes (chopped)
For the meatballs
3 Tbsps vegetable oil
1 onion (finely chopped)
1 tsp Turmeric
1 tsp ground Cumin
16 ozs minced lamb
3 Tbsps chopped parsley
vegetable oil (for frying)
fresh cilantro (to garnish)
boiled Rice (to serve)

1 Springform pan, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Plastic wrap, 1 Kitchen shears

Preparation steps

For the sauce, heat the oil in a frying pan and gently cook the onion and garlic until soft but not browned.

Add the spices and sweet potato, cook for 2 minutes then add the tomatoes and about 2 cups of water and bring to a simmer. Cook very gently for 20 minutes, stirring from time to time, then season with salt and pepper.

Meanwhile, make the meatballs. Heat the oil in a pan and cook the onion gently until soft but not browned. Add the turmeric and cumin, cook for one minute then remove the pan from the heat. Mix in the lamb and parsley, season with salt and pepper and shape the mixture into meatballs.
4.
Heat the oil in a clean frying pan and gently fry the meatballs until they are lightly browned all over. Add them to the sauce and continue cooking for 15 minutes or until the meatballs are cooked through. Serve garnished with fresh coriander and the boiled rice alongside.
