- 2 Tbsps olive oil
- 4 Chicken drumstick
- 1 onion (chopped)
- 2 cloves garlic cloves (chopped)
- 1 red pepper (seeded and sliced)
- 1 green pepper (seeded and sliced)
- 6 ripe vine Tomatoes (cored and chopped)
- 2 bay leaves
- 1 tsp sugar
- 1 tsp smoked paprika
- salt
- peppers
- Rice (or mashed potato, to serve)

Add 100 ml / 3 ½ oz water or stock, some chopped carrots and transfer to a lidded casserole dish and cook slowly for an hour.
Preparation steps
1.
Heat the oil in a pan and brown the drumsticks until golden. Remove to a plate and set aside.
2.
Add the onion and garlic and cook gently until golden, then add the chicken back to the pan and add the peppers and tomatoes, bay leaves, sugar, paprika and seasoning and allow to simmer for about 10-15 minutes until all is combined. Adjust the seasoning.
3.
Serve hot with your choice of accompaniment.
