- 3 cups all-purpose flour
- 2 tsps Baking powder
- ½ tsp salt
- ¾ cup unsalted butter
- 1 cup sugar
- 6 ½ ozs Marzipan
- 2 eggs
- ¼ cup cream (48% fat)
- 1 Tbsp kirsch (optional)
- 1 tsp vanilla extract
- To decorate
- 12 Candied cherry (quartered)
- 11 ozs Dark chocolate (70% cocoa solids)
Preparation steps
1.
Line 3 baking trays with non-stick baking paper.

Sift the flour, baking powder and salt into a bowl and set aside.

Beat together the butter and sugar until pale and fluffy.
4.
Beat the marzipan in a mixing bowl until smooth. Add 1/4 of the butter-sugar mixture and beat until smooth. Add the remaining butter-sugar mixture and beat until smooth.

Add the eggs one at a time, beating well after each addition, until combined.

Add the cream, kirsch and vanilla, and beat until smooth. Add the dry ingredients and beat until just combined.

Spoon into a piping bag fitted with a 1cm|1/2" star nozzle, and pipe 5cm| 2" mounds onto the baking trays, spaced 5cm| 2" apart. Place a cherry quarter on the centre of each and chill for 30 minutes.
8.
Heat the oven to 190°C (170° fan) 375°F gas 5.
9.
Bake for 12-15 minutes, until lightly browned. Place on a wire rack to cool completely.
10.
Melt the chocolate in a heatrpoof bowl over a pan of simmering (not boilling) water. Dipe the flat side of each sweet into the chocolate and place chocolate side upwards on non-stick baking paper to set.
