- ¾ cup coconut sugar
- ⅔ cup unsalted butter
- 1 tsp vanilla extract
- 1 egg
- 1.333 cups self-rising flour
- ½ cup chopped Pistachio
- ½ cup Sesame seeds (lightly toasted)
Preparation steps
1.
Beat together the sugar and butter in a mixing bowl until creamy.

Beat in the vanilla and egg, followed by the flour and mix to a soft dough. Wrap in cling film and chill for 30 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Roll pieces of the dough between the palms of your hands into small balls. Flatten gently to form little discs, about 1cm|1/2" thick.
5.
Sprinkle the pistachios and sesame seeds into 2 separate shallow bowls.
6.
Press one side of the dough discs into the pistachios and press the other side into the sesame seeds. Brush off any excess and place on the baking trays about 5cm|2" apart.
7.
Bake for 10-15 minutes until golden brown. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
