Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Separate the pastry slightly and mix with the melted butter. Take half the pastry and layer it roughly 1 cm deep in a baking tray or baking dish. Scatter over half of the pistachios and top with the remaining pastry. Bake for around 25 minutes until golden.

Meanwhile, boil the sugar, honey and water to make a syrup.

Remove the kadayif from the oven and pour the hot syrup evenly over the top. Sprinkle with the remaining pistachios and leave for at least 1 hour.
5.
Cut into slices and serve.
