1 pkg frozen Puff pastry (thawed)
3 Tbsps good-quality olive oil
1 large yellow onion (peeled and sliced)
2 yellow Bell pepper (rinsed; trimmed and cut into strips)
1 ½ cups cooked ham (cut into strips)
½ tsp dried thyme
salt (to taste)
freshly ground Black pepper (to taste)
1 fresh egg (beaten)
1 cup shredded Mozzarella

Preparation steps

1.
Defrost the puff pastry according to package instructions.

Heat the oil in a large skillet over medium heat; add the onions and peppers and saute for 3 to 6 minutes. Add the ham; season with thyme, salt and pepper. Cook until the ham is heated through and the vegetables are tender. Remove from heat and let cool.

Preheat oven to 400ºF / 200ºC.

Cut the puff pastry sheets into 4 rounds. Place vegetable and ham filling in the middle of each round. Pinch the edges of the pastry to create an edge; brush the edges with egg wash. Sprinkle shredded cheese over the vegetables and ham.
5.
Place on prepared baking sheet. Bake for 15-20 minutes, or until golden brown. Serve with a side green salad.
