- 8 cups Oxtail (cut into thick slices)
- plain flour (for dusting the meat)
- 0.333 cup olive oil
- 3 onions (chopped)
- 3 Tomatoes (diced)
- ⅔ cup white wine
- ⅔ cup Orange juice
- 2 Tbsps grated Orange peel
- 2 Tbsps chopped parsley
- 2 cloves garlic cloves (minced)
- 1 Bouquet garni
- salt

Preparation steps

Lightly flour the pieces of oxtail.

Heat the oil in a large casserole. When its spitting, seal the pieces of veal. When they are sealed, add the chopped onions and garlic and cook until they soften. Pour in the white wine and orange juice.

Add the tomatoes, bouquet garni, season with some salt and pepper and chopped parsley.
4.
Cover and cook over a low heat for 1 hour 30 minutes until the meat is tender and flavours are infused.
5.
Serve with seasonal vegetables.
