- 2 Tbsps olive oil
- 21 ozs Italian sausage
- 1 onion (peeled and finely chopped)
- 2 cloves garlic cloves (peeled and finely chopped)
- 2 cups canned Diced tomatoes (diced)
- 4 Tbsps Tomato paste
- salt (to taste)
- 8 cups dried Penne
- 1 ½ cups frozen, chopped Broccoli
- 1 ball Mozzarella (sliced)
- freshly ground Black pepper (to taste)
Preparation steps

Heat the oil in a large skillet over medium heat. Cook the sausages until nicely browned, about 6 minutes. Remove the sausages from the skillet and set aside. Add the onions and garlic; saute until the onions are soft and translucent, about 5 minutes. Add the diced tomatoes and tomato paste, stirring to incorporate. Slice the sausages into bite size pieces and add to the skillet. Cover and simmer gently for 10 minutes.

Preheat oven to 350º F. Coat an 8 x 8-inch baking dish with nonstick cooking spray.

Meanwhile, cook the pasta in salted boiling water according to the package instructions until al dente. Add the frozen broccoli for the last 2 minutes. Drain the pasta and broccoli well.

Add the pasta and broccoli to the skillet with the tomato and sausage mixture; mix well. Season to taste with salt and pepper and transfer mixture to baking dish. Lay the sliced mozzarella of the pasta mixture.

Bake for 15 to 20 minutes, or until heated through and bubbly. Serve.
