- 400 grams Rigatoni
- 300 grams Spinach
- 200 grams Cherry tomatoes
- 500 grams puréed Tomatoes (sauce)
- 6 sun-dried tomatoes in oil
- 125 grams Bacon
- 1 onion
- 2 Tbsps olive oil
- 100 grams Goat cheese
- salt
- peppers (from the mill)
- Basil (for garnish)
Preparation steps
1.
Rinse spinach, separate the leaves and briefly boil in salted water. Drain.

Halve cherry tomatoes.
3.
Drain sundried tomatoes and finely chop.
4.
Cut bacon into strips.

Peel onion, chop finely and heat with 1 tablespoon of olive oil. Add the tomato sauce, season with salt and pepper and let simmer for about 15 minutes.

Boil pasta in salted water until al dente.

Fry bacon with sun-dried tomatoes in the remaining olive oil until crisp. Add the spinach and cherry tomatoes and leave briefly on the heat, then salt and pepper.

Drain the pasta, add to the spinach, mix well, arrange on warmed plates. Pour some of the tomato sauce on it and sprinkle with crumbled goat cheese. Serve garnished with basil leaves.
