Peanut Diamonds with White Chocolate
Ingredients
- For the diamonds
- 125 grams butter
- 125 grams Oats
- 1 egg
- 150 grams brown sugar
- 1 pinch salt
- 1 generous pinch Ground cinnamon
- 1 generous pinch ground Cardamom
- 1 Tbsp Peanut butter
- 4 Tbsps Pastry flour
- 100 grams chopped Peanuts (unsalted)
- 3 Tbsps honey
- For the topping
- 150 grams white Couverture
- sugar
Preparation steps
For the diamonds: Briefly cook oats in pan with hot butter. Remove oats from heat and let cool.
Preheat oven to 180°C (approximately 350°F) and line 20 x 20 cm (approximately 8 x 8 inches) baking sheet with baking paper.
Beat egg with sugar, salt, cinnamon and cardamom until creamy. Gradually stir in peanut butter, flour, oats and peanut. Pour batter onto lined baking sheet, smooth surface and bake in oven about 15 minutes until golden brown.
Remove from oven, separate peanut mixture from baking sheet and brush with honey. Cut peanut mixture into diamonds while still warm then let cool.
For the topping: Melt chopped white chocolate. Dip tops of peanut diamonds into chocolate and let solidify. Decorate peanut diamonds with white chocolate as desired and sprinkle with a little sugar.
