3 ½ cups powdered sugar
½ cup butter (plus extra for pan)
2 ¼ cups brown sugar
½ cup milk
¾ cup creamy Peanut butter
1 tsp pure vanilla extract
For Chocolate and Nut Topping
½ cup unsalted butter
10 ozs bittersweet or dark Chocolate (1 oz each)
½ cup Peanuts

Preparation steps

Sift confectioners' sugar into a large mixing bowl. Set aside.

In a medium saucepan set over medium heat melt the butter. Stir in brown sugar and milk. Bring to a boil and boil for 2 minutes, stirring constantly. Remove from heat. Stir in peanut butter and vanilla. Pour over confectioners' sugar; beat until smooth.

Lightly coat an 8 x 8-inch dish with butter. Pour fudge into prepared dish and smooth the top. Chill until firm and cut into 1 x 1-inch squares.

Chop the chocolate into small pieces. In the top of a double boiler set over just simmering water, combine chocolate with butter. Stir frequently until smooth and creamy. Remove from heat source and cool slightly.

Place melted chocolate in a pastry bag fitted with a plain tip. Pipe chocolate on each fudge square and sprinkle with chopped peanuts. Allow the chocolate to harden and serve.
