Pears provide vitamins A, B1, B2 and C. Vitamin C in particular is very sensitive to heat; however, the short boiling time ensures that not too many of the valuable ingredients are lost.
Jams with little added sugar can have a fairly long shelf life. Make sure you work cleanly and the jars are filled to the brim and tightly closed. Use smaller jars and store them in a cool place.

- 6 ⅗ lbs Pear
- 2 lemons (juiced)
- 4 Cinnamon stick
- 1 tsp cloves
- 14 ozs sugar
Preparation steps
Peel and halve the pears, then remove the core. Drizzle the pears with the lemon juice, and layer into jars.
Bring 1 quart of water to a boil in a saucepan with the cinnamon sticks, cloves, and sugar. Simmer for 2-3 minutes, until thickened slightly. Cover the pears completely with the sugar mixture (remove the cinnamon and cloves if you'd like).
Seal the jars, and place in a large saucepan with approximately 1 quart of hot water. Boil the jars for 20 minutes. Cool completely and store in a cool, dark place.
