Ingredients

for

For the sauce
1 onion (finely chopped)
2 garlic cloves (peeled off)
800 grams canned, crushed Organic tomato
3 Tbsps olive oil (Extra virgin)
salt
1 tsp sugar
freshly ground peppers
freshly grated Nutmeg
For the meatballs
400 grams mixed Ground meat
1 small onion (finely chopped)
2 Tbsps parsley (finely chopped)
1 tsp thyme (finely chopped)
½ tsp Chili powder
salt
1 egg
3 Tbsps breadcrumbs
vegetable oil (to saute)
also
500 grams Penne
Parmesan (as desired)

Preparation steps

For the sauce: Heat the oil in a skillet and saute the onion until translucent. Add the tomatoes, sugar and whole cloves of garlic and bring to a boil, then reduce to a simmer and simmer gently for 5 minutes. Remove from the heat and season with salt, pepper, and nutmeg.

For the meatballs: In a bowl, mix together the ground meat, onion, parsley, thyme, chile powder, egg, and bread crumbs and season with salt. Knead until well combined.  With moistened hands, shape into small balls. Heat 3 tablespoons oil in a pan and saute the meatballs until golden brown all over. Remove and drain on paper towels and place in the tomato sauce. Cook the pasta according to package directions, drain and  transfer to plates, Serve with the sauce and 3- 4 meatballs per person. Season to taste with Parmesan shavings and garnish with sprigs of thyme.
