Pepper-Marinated Chicken
Ingredients
- Ingredients
- 10 small Chicken breasts (each 120 grams)
- 20 small Chicken wing
- 75 milliliters olive oil
- juice of lemons
- salt
- freshly ground pepper
- 3 garlic cloves
- 2 Red Pepperoncini
- 1 bunch Sage
- 6 Lemon wedge (raw)
Preparation steps
For the marinade: stir together the olive oil, lemon juice, pepper and 1 teaspoon of salt. Peel and press the garlic. Rinse the pepperoncini, remove the seeds, and cut into thin rings. Rinse and shake dry the sage. Pluck the leaves and cut one third of them into thin strips and set the extra leaves aside. Mix the hot pepper rings and sage strips in the marinade.
Mix the chicken breasts and wings with the marinade and let sit for about 10 minutes. Remove from the marinade and distribute with the lemon wedges on a deep baking dish. Roast on the center rack of a preheated oven at 200°C (approximately 400°F) for about 30 minutes, drizzling with the marinade from time to time. If necessary, finish cooking the chicken pieces on the stove. Garnish with the sage leaves and lemon wedges and serve.
