- 800 milliliters Vegetable broth
- 4 Bell pepper (2 yellow and 2 red)
- 2 sticks Celery
- 1 onion
- 2 garlic cloves
- 3 Tbsps olive oil
- Sea salt
- freshly ground peppers
- Wine vinegar
- 60 grams Feta
- parsley
- rosemary (for garnish)
Preparation steps
1.
Rinse peppers, cut in half, remove seeds and ribs and cut into small cubes.

Trim celery, rinse and cut into thin slices. Chop greens roughly.

Peel the onion and garlic, dice.
4.
Sauté whole vegetables briefly in hot oil, then pour in the broth and simmer about 4-5 minutes. The vegetables should be cooked but still have bite. Season with salt, pepper and vinegar. Add parsley leaves and celery leaves and pour into glasses. Crumble feta over top and serve garnished with rosemary.
