- 1 Pineapple
- 1 handful fresh mint
- ½ Vanilla bean
- 6 ozs Orange juice
- 3 Tbsps honey
- 8 dark Mulberries (or substitute blackberries)
Preparation steps

Peel the pineapple and remove the hard core. Cut into small pieces. Rinse the mint, put some beautiful leaves aside for garnish, cut the rest into strips.
Slit the vanilla bean lengthwise and heat along with the orange juice. Stir in the pineapple and simmer for about 5 minutes. Stir in the sweet honey and the chopped mint.

Pour the compote in jars and let cool as desired.

Rinse the mulberries and pat dry. To serve, distribute berries on the pineapple compote and garnish with the remaining mint.
