½ cup sugar
1 tsp pure vanilla extract
1 cup dried Figs (chopped)
1 cup Date (pitted and chopped)
1 cup dried Apricot chopped (plus extra for garnish)
½ cup seedless raisins
1 ½ cups almonds finely chopped (may substitute walnuts)
6 Tbsps Corn starch
For Glaze
1 ½ cups powdered sugar
2 ½ tsps milk
tsp salt
½ tsp pure vanilla extract
1 tsp butter (melted)

Preparation steps

Preheat oven to 325º F. Grease and flour a cookie or jelly roll pan.

Separate the eggs; setting aside the yolks. In a large bowl, beat the egg whites, slowly adding in the sugar. Beat until stiff peaks form. Beat in the eggs yolks and vanilla.

In a separate bowl, combine the fruits and nuts. Toss with cornstarch to thoroughly coat. Gradually fold fruit and nuts into egg mixture.

Place mixture on prepared cookie sheet and smooth out with a spatula. Bake for 25 to 30 minutes, or until cook through. Allow to cool.

In a mixing bowl, combine ingredients in order. Mix until creamy and smooth. Drizzle glaze over the top and sprinkle with finely chopped apricot pieces. Cut into pieces and serve.
