3 ½ ozs fine Egg noodle
2 Tbsps soybean oil
5 cups ground Pork
soy sauce
cayenne pepper
1 Tbsp sesame oil
2 cloves garlic cloves (finely chopped)
2 scallions (finely chopped into rings)
1 ¼ inches fresh ginger (peeled and finely chopped)
2 ½ cups shiitake mushrooms (quartered)
1 ½ cups Snow peas (sugar snaps)
2 ½ cups large Chinese cabbage (cleaned, shredded)
1 jar Bamboo shoots (rinsed and drained)

Preparation steps

1.
Cook the noodles in salted water according to packet instructions. Refresh and drain.
2.
Heat the soybean oil in a large skillet or wok and brown the pork, stirring constantly. Season with soy sauce and cayenne pepper, remove from the pan and set aside.
3.
Heat the sesame oil in the skillet and fry the garlic, scallions, ginger, mushrooms, snow peas, Chinese leaves and bamboo shoots for 2-3 minutes stirring constantly.
4.
Add the fried pork and drained noodles and continue frying for a further 2 minutes.
5.
Season well with soy sauce, salt and cayenne pepper.
